Spaghetti Squash is one of our favorite fall vegetables and we think it is one of the easiest ones to cook. It looks intimidating but it is not. We actually cook it in a microwave, as this is the simplest way to cook spaghetti squash. Spaghetti squash is a healthy substitute for pasta, plus it is also low in calories and fat! With this recipe, you do not need any special gadgets. When done, spaghetti squash has a texture like an angel hair pasta. It is delicate and chewy. Let’s get started!

Ingredients:

  • 1 Spaghetti Squash
  • ½ cup parmesan cheese
  • ½ stick of butter - melted
  • 1 teaspoon parsley flakes
  • Pinch of salt & pepper

Directions:

Cut spaghetti squash in half lengthwise.  Scoop out seeds from the center and place flat side down in a microwave-safe pan.  Fill the bottom of the pan with about a ½ inch of water.  Cooking times can vary depending on the size of squash and wattage of your microwave (8 – 12 minutes).

Squash is done when a fork or knife can easily prick the skin and slide in.

Let cool until squash can be handled.  Using a fork, scrape the inside of the squash and scoop it out into a bowl.  Mix in remaining ingredients and enjoy!
