Our recipe this month features Tomatoes, which we are going to use to make Baked Tomatoes. This simple recipe is a family favorite that I remember making for family gatherings.   I grow my own tomatoes for a sauce but they all ripen at the same time, so here is another recipe I look forward to this time of year. It is a great vegetable to serve for dinner. 

Ingredients:

  • 2 Beefsteak variety tomatoes (or whichever you prefer)

  • ½ cup Italian style breadcrumbs

  • 3 tsp dried or fresh parsley chopped

  • 1 Tbs parmesan cheese

  • 2 ½ Tbs olive oil

  • Pinch of salt and pepper

Directions:

  1. Cut Beefsteak tomatoes in half. 

  2. Place four pieces on cookie sheet. 

  3. Combine the rest of the ingredients in a bowl and place equal amounts on tomato halves. 

  4. Bake in a preheated oven at 350 degrees for 5 minutes. 

  5. You want the tomatoes to still be firm. 

  6. Place under broiler for 1-2 minutes to toast the breadcrumbs on top. 

  7. Enjoy!
