This month we have a recipe that uses Peas. There is evidence that Peas are one of the oldest cultivated vegetables with evidence that they were used as a food source as far back as ancient Egyptian times. Peas are easy to grow but they do not do well in warmer weather. If you are not growing peas this year, you can use frozen or canned peas! Macaroni and Peas

Ingredients

2 cups dry pasta – any small shape

1 Tbs olive oil

1 small onion chopped

2 8oz. cans tomato sauce

2 cups peas

Salt & pepper

Parmesan cheese

Directions

Heat oil in a pot and saute onion with a pinch of salt and pepper on medium/high heat until tender. 

Add tomato sauce and lower temperature and simmer on stovetop for 30 minutes, stirring occasionally.

Cook pasta according to directions.  Toss with sauce and cooked peas.  Top with parmesan cheese.

Yield: 4-6 servings
