Pasta with Chicken & Spinach Recipe 

  • 1/8 cup olive oil
  • 1 large shallot diced
  • 1 ½ lbs chicken breast cubed
  • 10 oz of fresh spinach
  • 1 28oz can crushed tomatoes
  • ½ cup half & half
  • Salt and pepper to taste
  • 1 lb rigatoni pasta (cooked according to package instructions)
  • Parmesan or Romano on top before serving

Heat oil in pan on medium/high heat.  

Saute the diced shallot and add chicken until cooked through. 

​Add a pinch of salt and pepper. Next add spinach until wilted.

Add tomatoes and simmer for 20 minutes on low/medium heat and then add the half and half. 

​Cook on low for 10 minutes.

Top with Parmesan or Romano cheese before serving. 

You can add some basil if you would like also.

​Yield: 4 Servings
