Pasta with Chicken & Spinach Recipe
- 1/8 cup olive oil
- 1 large shallot diced
- 1 ½ lbs chicken breast cubed
- 10 oz of fresh spinach
- 1 28oz can crushed tomatoes
- ½ cup half & half
- Salt and pepper to taste
- 1 lb rigatoni pasta (cooked according to package instructions)
- Parmesan or Romano on top before serving
Heat oil in pan on medium/high heat.
Saute the diced shallot and add chicken until cooked through.
Add a pinch of salt and pepper. Next add spinach until wilted.
Add tomatoes and simmer for 20 minutes on low/medium heat and then add the half and half.
Cook on low for 10 minutes.
Top with Parmesan or Romano cheese before serving.
You can add some basil if you would like also.
Yield: 4 Servings
